Observation: Observed rodent droppings in a few areas of the kitchen. Unsure whether the droppings are old or recent. Pest control manangement visits regularly but no report on file as the building owner receives them.
Corrective Action(s): Required operator to clean and sanitize all areas in the kitchen and remove all droppings. Regularly monitor the areas to ensure that the droppings do not re reappear. If they reappear, it means that rodent activity is current.

Observation: Several areas in the facility require attention:
1. In the corner by the hand washing station where boxes are stored
2. Under and behind counters and machine
3. Pizza roller machine
As the operator reduced menu down to only pizza, back cooking area is not in use; clutter must be organized. Then, thorough cleaning is required.
Corrective Action(s): Required operator to clean and sanitize all areas in the kitchen. Operator is to pay more attention to the noted locations above.

Low temperature dishwasher in good working condition; detected 100 ppm of residual chlorine at plate level after final rinse cycle

All coolers at 4 C or lower; all ffeezers at -18 C or lower;
No hot holding units available at the time of visit as the premises is going through renovation of front area only where no food prep/handling is done. Renovation done when the store closes and entrance to the kitchen is blocked while renovating.
