Observation (CORRECTED DURING INSPECTION): Two containers of soup at 50C and were placed in the hot holding unit.
Corrective Action(s): Ensure potentially hazardous foods are reheated to greater than 74C prior to placing in the hot holding unit to prevent the growth of pathogens and or the formation of toxins. Soup was reheated at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -17C.
-Upright cooler was at 4C.
-Cafeteria line coolers were at 4C.
-Under counter cooler was at 4C.
-Upright freezer was at -18C.
-Cooked foods properly cooled in a rapid manner - foods in the walk-in cooler were at 4C.
-High temperature dishwasher had a final rinse temperature of 77C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser tested at 200ppm.
-Meat slicer disassembled for cleaning and sanitizing by staff at the end of the day. Slicer was found to be clean and well maintained
-Ice machine was found to be clean and sanitary.
-General food storage practices satisfactory at the time of inspection. One scoop was found stored inside the ingredient container with the handle in direct contact with the food.
-Facility is serviced by professional pest control 2-3 times a week. Pest issues have improved since the previous inspection. Continue to clean and sanitize all areas affected with rodent droppings and contact pest control services as needed.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until January 31, 2023.
