3) Ensure cleanliness is maintained, especially as this facility uses a lot of flour.

- handwashing station stocked with soap, paper towels and hot and cold running water
- handwashing station clear of debris - good
- sanitizer measured 100ppm chlorine in spray bottle and in sanitize compartment of three compartment sink
- ensure green onion slicer is thoroughly cleaned after each use

- counter top cooler: 3C
- chicken under counter cooler: 3C throughout
- fridge/freezer (chicken/fries): 3C/-22C
- kim chi fridge - not on at time of inspection and labelled as such
- chest freezer (fries): -28C
