Comments

- Cheese at cookline was stored in undercompartment cooler unit. Staff showed 2 hr time logs for cheese monitoring. Cheese are not put out during slower times and during meal rush it will be documented how many slices are discarded. Frozen containers to still be used when cheese is out at room temperature. Manager to submit documentation for formal approval. Should future inspections identify deficiencies with temperature logs and monitoring, the cheese will be required to be stored at 4C or less at all times (ie. in cooler unit).
- No signs of pest activity noted at time of inspection
- Required cleaning and organization completed. Continue to maintain a high level of sanitation and organization.
- All hand wash stations were fully equipped (soap, paper towel, hot and cold running water).
- No scoop was stored in oreo bulk food container. Inquired about scoop, operator said they use a measuring container. This is not a scoop. Operator to obtain a proper scoop like the other bulk foods by next routine inspection.
