Observation (CORRECTED DURING INSPECTION): - Numerous foods were noted to be uncovered in walk-in cooler.
- One container noted to be stacked on top directly on top of uncoverd container of food
- Flat/carton of eggs stored directly on floor of walk-in cooler
Corrective Action(s): - Ensure foods are covered with food grade wrap or tight fitting lids
- Do not stack food container on top of food products. Bottom of container may contaminate food products in lower container if uncovered.
- Store all food products on shelving minimum 15cm off of the floor.
- Correcive actions were completed at time of the inspection. Ongoing attention is needed to ensure food is stored in a manner in which it is protected from contamination.

Observation: - Grease accumulation remains on floor under/behind cook line. Operator reported floor was cleaned since routine inspection.
- Grime food debris noted under line cooler
Corrective Action(s): - Thoroughly clean floor under cook line to remove grease. Ensure area is cleaned frequently enough to prevent accumulation of grease.
- Pull out line cooler and clean/scrub floor to remove grime and food debris.
Send confirmation to EHO by email once completed.

Comments

Follow up inspection conducted. Corrective actions taken:

- Areas where mouse droppings were noted have been cleaned and sanitized. Additional traps have been placed in the areas and hole in wall filled with steel wool.
Continue to monitor for any additional pest activity. Ensure any additional droppings present are cleaned up promptly and the area sanitized. Maintain a high level of sanitation.

- Interior of line cooler has been cleaned. Operator reported that door seals were cleaned. Minor amount of debris remains which could not be removed. Door seals may require replacement to ensure they remain in good repair and sanitary condition.

- Spray bottle for sanitizer in kitchen has been replaced with another spray bottle which is functional.

Note: Discussed flooring under cook line with Operator. Flooring should be continuous to facilitate cleaning and to ensure surface is maintained in sanitary condition free from accumulation of grease and food debris.
