Observation: 1) Hot water at hand washing station near the cooking line was not operational. Alternative hand wash station was available as a temporary measure.

2) P trap on dishwashing sink was leaking.
Corrective Action(s): 1) Ensure hot water is available at all hand washing stations.
2) Repair/replace p trap to ensure that is no longer leaking.
To be corrected by: August 18, 2023. Operator to call EHO for follow up inspection.

Comments

Routine Inspection:
- Hot/cold water, liquid soap, and paper towel available at hand washing stations
- Low temperature dishwasher reached 50ppm chlorine at plate surface
- 704ppm Lactic acid available for sanitizing contact surfaces
- Walk in freezer was -18C or lower
- Walk in cooler was 4C or lower
- Preparation line coolers were 4C or lower
- Ice machines were in good condition; ice scoops were stored in a sanitary manner
- Bar coolers were 4C or lower
- Food items were being cooled in safe manner; gravy was being cooled in an ice bath
- Food storage was good; all food items were stored off of the ground. Food items in walk in cooler were labeled and dated
- No evidence of pest activity during inspection
- General sanitation and cleanliness was adequate.
