Observation (CORRECTED DURING INSPECTION): 1. Front hand sink lacked liquid soap.
2. Access to back area designated hand sink was blocked with a bowl.
Corrective Action(s): Liquid soap provided for above-noted sink. Bowl removed. Ensure that at all times, all hand washing stations are accessible and supplied with hot and cold running water, liquid soap, and paper towels.

Observation (CORRECTED DURING INSPECTION): 1. Raw shell eggs stored in cartons above open containers of sauce (ready-to-eat) in walk-in cooler.
2. Disposable plastic spoons stored in dry spice containers, handles in contact with spice.
Corrective Action(s): 1. Eggs removed and placed on bottom shelf (not above ready-to-eat foods). Note: Eggs for personal use, no signs of leakage. Open food containers covered. Ensure raw animal products are not stored above ready-to-eat foods in case of potential leakage onto foods below.
2. Ensure scoops are not stored with handles in contact with food product. Do not use disposable spoons as these are not intended for reuse, and are not designed to be washed and sanitized.

Observation: Small amount of what appears to be rodent droppings observed in one cabinet. Note: No other evidence of pest activity observed.
Corrective Action(s): Two open packages of takeout containers/lids discarded by staff. Other items stored in cabinet (takeout packaging only) are fully packaged. Ensure droppings are removed and affected areas are properly cleaned and disinfected. Ensure any gaps or holes that may potentially permit pest entry are properly sealed. Have premises re-serviced by pest control as required. Note: Last pest control service in Feb 2023. Date to be corrected by: Today.

Observation: Right sandwich cooler lid is detached and has been set aside. Bracket on right side appears to be missing.
Corrective Action(s): Ensure sandwich cooler lid is in place and in good working order so that food can be properly covered when sandwich cooler is not in active use. In the interim, ensure food inserts are covered with lids. Date to be corrected by: June 16, 2023.

Observation (CORRECTED DURING INSPECTION): 1. Bleach and detergent stored in area with food (oil).
2. Two spray bottles containing sanitizer are unlabeled.
Corrective Action(s): 1. Chemicals moved to chemical storage area. Ensure all chemicals (e.g. cleaners) are stored away from food.
2. Spray bottles labeled. Ensure all chemicals are properly labeled to identify their contents in order to minimize the risk of contaminating food / food contact surfaces.

Observation: One sandwich cooler and one upright cooler are stored in the back kitchen area. Coolers are off and not in use. Note: Sandwich cooler was blocking access to three-compartment sink and was moved during the inspection to make the sink accessible.
Corrective Action(s): Ensure the above-noted items are removed from the premises as they are not required for business use. Date to be corrected by: June 15, 2023.

Left sandwich cooler at 3 degrees C (below) and 2 degrees C (above).
Right sandwich cooler at 3 degrees C (below) and 4 degrees C (above).

Walk-in freezer at -20 degrees C.
Hot holding internal food temperatures at 60 degrees C or more.
Secondary cook step in use for donair/shawarma meat. Internal temperature 74 degrees C or more.
Donair/shawarma cooking units on, cones are in rotation.
Bleach water sanitizer available at 100 ppm chlorine in two spray bottles.
Three compartment sink is supplied with hot and cold running water and three sink plugs. Staff able to prepare 100 ppm chlorine bleach water solution in third sink compartment at time of inspection.
Gloves are non-latex.
Food is generally covered, with few exceptions (covered during inspection).
Raw donair/shawarma meat stored separately from, and not above, ready-to-eat foods.
Probe thermometer available on site.
Stored equipment and utensils in clean condition.
FOODSAFE requirements met at time of inspection. Certificate for staff on site is valid to November 24, 2023.
Washroom in clean condition. Sink adequately supplied.
Notes: 1. Temperature logs available but are not up-to-date. It was discussed that temperature logs are to be maintained and up-to-date.
2. Discussed end of day procedures for donair/shawarma cones. Ensure your food safety plan is followed.
