*Premises currently using model RW-2V for soup warming. Awaiting word from corporate head office as to whether the process the staff are using to heat the soup will be acceptable. There has been no response for approx. 5 months. If acceptable, the corporate food safety plan will need to be updated. Staff currently heat the soup from refrigeration temperatures to 90c and hold at 90c for 15 minutes before lowering the temperature of the unit so that it is hot holding at 60c. This takes approx. 30 minutes as the RW-2V units are not a rethermalizes.
Dishwasher at 77c (At plate level). Soap dispensed into wash cycle
