Observation (CORRECTED DURING INSPECTION): A) Noted large pots stored on a metal pallet in front of hand wash station.
B) Noted potential for splashing from hand sink beside dishwasher, onto clean dishes on the drain board that are drying..
Corrective Action(s): A) Relocate large pots to avoid staff having to reach over pots while hand washing and exposing pots to potential contamination.
B) Install a splash guard between drain board and hand sink to avoid potential contamination of drying food equipment. In the interim, do not push the drying rack all the way up to the end of the drain board. Leave enough of a space to avoid contamination

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Did not detect sanitizer in container with cloths submerged. Sanitizer in spray bottles was bleaching out the test strip (ie. too strong).
Corrective Action(s): Ensure chlorine sanitizer is maintained at 100ppm. Make sanitizer solution fresh at the start of each day and change as needed to maintain minimum required concentrations. Obtain test strips to verify and monitor sanitizer concentration.

Observation: Noted missing light cover over the lights in the back of the kitchen.
Corrective Action(s): Repair/replace light cover or install sleeves over lights.

Comments

All hand wash stations fully equipped with soap, paper towel, hot and cold running water.
Observed good hand washing practices at time of inspection.
All coolers 4⁰C or less (undercounter, inserts, upright sliding two door...etc)
No perishable foods were stored out at room temperature after lunch rush.
Freezers less than -18C
Hot holding of rice and broths all higher than 60⁰C.
General sanitation satisfactory. No obvious sign of pest infestation noted at time of inspection. Back door to hall was closed at time of inspection.
Meat slicer appeared clean at time of inspection. Staff said meat slicer is cleaned and sanitized after each use and is used about twice a day.
Ice machine appeared clean with scoop for ice stored hanging on hook outside of the ice.
High temperature dish washer achieved 71⁰C (with thermolabel).
