Observation: Ceiling above downstairs dry storage room requires replacement tiles to prevent contamination of food by insulation and other debris. Approximately half of the ceiling has been opened up to allow pipe access.
Corrective Action(s): Replace all ceiling tiles within one month (21st February 2016).

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: A significant amount of spilled (raw) rice was observed around the rice bucket in the kitchen cupboard.
Corrective Action(s): Clean up all spilled food by tomorrow (22nd January 2016). Ensure all food is kept in tightly-sealed containers in order to prevent the attraction of pests.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Several shelves are still being lined with newspaper. This is not a suitable material for shelving that will hold dishware or food, as it cannot be easily cleaned and sanitized.
Corrective Action(s): Replace with smooth, non-porous liner material (or paint/refinish the shelving) by next week (28th January 2016).

General sanitation satisfactory at time of inspection. No pest issues observed on site.
Bleach sanitizer available at 200 parts per million chlorine in spray bottle. Ensure this is used to wipe down food contact surfaces prior to their use.
Hot and cold water, liquid soap and paper towels available at three-compartment sink. 3-compartment dishwashing method posters available above sink for reference.
Note: install a paper towel dispenser near this sink by next week (28th January 2016). Do not place paper towels on top of the fridge.
Organization of food in cupboards and coolers satisfactory.
All cooler and freezer temperatures satisfactory.
Food is purchased from approved sources.
Food is generally cooked in quantities that do not generate leftovers. Discussed cooling of leftovers and cooking temperature checks during inspection - processes satisfactory.
