Observation (CORRECTED DURING INSPECTION): 1) Beef sausage rolls stored at room temperature. The operator stated that the beef sausage rolls were baked in the morning.
2) Multiple food items inside the improperly working cooler stored at 14C.
Corrective Action(s): Discard all cold potentially hazardous food items that are temperature abused. All cold foods must be stored at < or = 4C at all times.

Observation: The upright cooler with sliding doors in the main kitchen measured 14.4C at the time of the inspection.
Corrective Action(s): Fix the cooler. Ensure that the temperature maintains < or = 4C at all times. Do not store any cold potentially hazardous food items (ie meats, dairy products, sliced vegetables) inside this cooler in the meantime.

Comments

- General sanitation satisfactory.
- All handwashing stations (front/back of kitchen) supplied with cold/hot running water, soap, and paper towels.
- Surface sanitizer available in designated buckets with presoaked wiping cloths at 100ppm bleach concentration.
- High temperature dishwasher achieved 72C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.

Temperature control:
- All other coolers: < or = 4C
- All freezers: < or = -18C
- Thermometers available in all coolers and freezers.
- Daily temperature log kept up to date.
