Comments

Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All coolers maintained at or below 4 degrees Celsius.
All freezers maintained at or below -18 degrees Celsius.
Temperature logs well maintained.
QUAT sanitizer = 200 ppm in all buckets. Wiping cloths stored in sanitizer solution - very good.
Low temperature dishwasher sanitizing with 100 ppm chlorine. Kitchen manager informed that dishwasher will be replaced next week for a new low temperature dishwasher.
General food storage practices very good:
- All food items covered and protected from contamination.
- All food items stored at least 6 inches off the floor.
- Raw meats stored away from ready-to-eat foods.
- Dry storage room organized.
- Bulk dry products are stored in pest-proof containers.
No signs of pest activity at the time of inspection.
Pest control in place.
Overall maintenance good.
Very good personal hygiene practices observed:
- Staff wear hairnets and kitchen coats/jackets
- Uniforms are clean
- Frequent and proper hand washing observed
