Observation (CORRECTED DURING INSPECTION): 1. Meat slicer was not properly washed after use; when inquired, operator stated that the slicer was used yesterday.
2. Dishwasher trays soiled severely with black grime.
3. Ice machine required cleaning
Corrective Action(s): Required operator to clean and sanitize the meat slicer immediately and ensure to have it cleaned and sanitized soon after use. Dishwasher tray is to be scrubbed, cleaned and sanitized prior to use. Ice machine is to be cleaned and sanitized.

Overall sanitation is okay; a few unnecessary items in the kitchen that need to be removed. Ensure to clean areas under and behind equipment regularly
Hand washing stations stocked with liquid soap and paper towel
Hot and cold running water available on site
High temperature dishwasher in good working order; detected 74 C at plate level after final rinse cycle
Bleach sanitizer on site and in use at >200 ppm. Ensure to have 100-200ppm of residual chlorine for adequate sanitization (1/2 teaspoon per 1 litre of water)
All coolers at 4 C or lower; all freezers at -18 C or lower
No sign of pests noted at the time of inspection
Foodsafe Level 1 Certificate obtained and posted on site.
