Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher registered at 0 ppm for chlorine after the final rinse cycle. A low temperature dishwasher must have an adequate concentration of sanitizer (50-100 ppm) in order to adequately sanitize utensils and dishes.
Corrected during inspection: Operator adjusted sanitizer dispenser tube and dishwasher registered at 100 ppm for chlorine.

Observation: Concentration of the dishwasher sanitizer and the surface sanitizers not being verified. Relying on third party biweekly visits to verify sanitizer concentrations.
Corrective Action(s): Dishwasher and surface sanitizer must be verified at least daily (recommend twice a day) to ensure concentrations are adequate. Records must be maintained. Implement immediately. Create a sanitation plan detailing these procedures by January 8th, 2021.

Observation: Hot water tank that supplies dishwasher and three comp sink is broken. Operator has turned off dishwasher. Hot water available at handsinks, prep sink and there is limited hot water at 3 compartment sink.
Correction: Plumber to install a new hot water tank tomorrow. Operator to wash dishes in prep sink and rinse and sanitize at three compartment sink.

Damaged hot water tank replaced - dishwasher and three compartment sink now have a supply of hot and cold running water.

Food surface sanitizer: 2-in-1 'Sink and Surface Cleaner Sanitizer'
Ensure sanitizer is used as per manufacturer's recommendation and concentration is verified daily and recorded.
