Observation:
The wooden shelf and storage unit (beside the cooking station) has accumulated food debris and stains. This wood is hard to clean and remove these stains.
Corrective Action(s):
Paint all sides and surfaces of the wooden shelf and storage unit with a light colored paint to seal the wood and make it cleanable.

Observation:
The plastic cutting board has deep grooves and chips in it. These areas are no longer cleanable.
Corrective Action(s):
Discard the cutting board and purchase new ones.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Food contact surfaces are not sanitized with an appropriate sanitizer. Operator only uses detergent to clean surfaces.

Corrective Action: Directed the operator to prepare a sanitizer (100ppm chlorine) in a spray bottle to spray on surfaces after detergent cleaner is used.)
Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezer was -18C; and thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Soap and bleach present for cleaning. Bleach in spray bottle was [Cl2] of 100ppm.
- Food stored in food grade containers; covered; in groups with proteins separate or below RTE foods; and 6" off the floor on shelves or platforms.
- Hot foods (curries, pakoras, etc.), sweet, and snacks are made in 2-day batches; rice, naan, samosas made daily.
- General sanitation level is good. Improvement needed on the upper walls along the exhaust hood; and the walls beneath and behind shelving units and tables.
- No signs of pests.
- FoodSafe certified staff present. Go to www.foodsafe.ca to register for the refresher course.
- No expired foods in use or for sale. FIFO rules being followed.
