Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer in spray bottle and container with cloths submerged was too strong (ie. bleaching out the test strip).
Corrective Action(s): Ensure chlorine sanitizer is maintained at 100ppm (ie. 2ml to 5ml of bleach per liter of water). Obtain chlorine test strips to verify sanitizer concentration.

Comments

- Hand wash stations equipped with soap, paper towel, hot and cold running water.
- All cooler 4C or less (sandwhich prep, display case, undercounter milk,.. etc)
- Chest freezer -18C
- Hot holding of soup 72C
- Staff confirmed that soup is heated in microwave to 74C minimum and transferred into preheated hot holding unit to be maintained at 60C
- High temperature dish washer achieved 71C (as per thermolabel)
- General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
- Gelato freezer has been removed from premises.
- Container of ice in chest freezer. Ice is obtained from save on. Scoop for ice was not stored in the ice. .
- Sandwiches, soups and desserts come in premade and appear to be from approved sources.
