Hand wash sinks provided with liquid soap and paper towels.
Chlorine sanitizer available at 100 ppm.
Prep line coolers, upright cooler and sushi display cooler were at or below 4 deg C.
Freezers (3) were at or below -18 deg C.
Hot holding for miso soup and rice was at or above 60 deg C.
Temperature log was not available at time of visit. Ensure temperature log is on-site and up to date.
This is an important part of the food safety management system.
High temp dishwasher reached 75 deg C at the plate surface.
Food items were stored off the floor (on shelves).
Staff - wearing clean uniforms and hair restraint.
No signs of pests noted at time of visit. Ensure there is pest control monitoring.
Washrooms were in sanitary condition and provided with toilet paper, liquid soap and paper towels.
General sanitation was satisfactory.
