Observation: Wall mounted knife rack in sushi bar is too close to the garbage can.
Corrective Action(s): Knives stored close to the garbage can may become contaminated. Relocate the knife rack to a higher position or another location away from the garbage can.

Observation (CORRECTED DURING INSPECTION): Hand sink by cash register did not have paper towels.
Corrective Action(s): Make sure all hand sinks are always stocked with paper towels for staff to use after they wash their hands. Operator corrected at time of inspection.

Observation (CORRECTED DURING INSPECTION): Observed staff using the same pair of disposable gloves to carry out multiple tasks.
Corrective Action(s): Disposable gloves must be discarded after each task. After disposing of the used gloves, foodhandlers must wash their hands with liquid soap and warm water before putting on a new pair of disposable gloves. Operator corrected at time of inspection.

Corrective Action(s): Foods in coolers must always be covered to prevent contamination.
Raw meats must be stored below cooked meats; and cooked meats must be stored below vegetables and ready to eat foods to avoid cross contamination.

General observations:
Coolers were 4 degrees Celsius
Freezers were -18 degrees Celsius
Hot holding units were over 60 degrees Celsius
Organization of storage areas is satisfactory.
All hand sinks (except as noted above) are stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation is satisfactory.
Bleach sanitizer (bucket for wiping clothes) was 200ppm chlorine as per test strips.
No signs of pests.
