Wiping cloths stored in solution when not in use. Walk in cooler at or below 4 degrees C. Walk in freezer at -18 degrees C. Back area beverage cooler at 3 degrees C. Both preparation cooler inserts and lower sections at or below 4 degrees C. Hot holding at or above 60 degrees C. Front service area self serve cooler at 4 degrees C.
