Observation (CORRECTED DURING INSPECTION): 3 of the sanitizer spray bottles were noted with 1000 PPM QUAT.
Corrective Action(s): **Issue corrected at the time of inspection**
Supervisor diluted the 3 sanitizer spray bottles and 400 PPM QUAT was detected after the dilution. It is speculated that the staff who filled the sanitizer bottles the previous night did not dilute the sanitizer when filling the bottles. It is very important that the correct concentration, as per the manufacturer's label, is used for sanitizing food contact surfaces.
** Please purchase QUAT test strips to allow staff to determine if the correct concentration is available in the sanitizer spray bottle prior to using.
When the concentration is too high this becomes:
1. Hazardous for the staff who may come into contact with the sanitizer.
2. The amount used will not evaporate completely and may lead to a chemical hazard if transferred to food.
3. Finally, it is a huge waste of money to use such a high concentration when it is not required.

Observation: Grease buildup on the floor below the deep fryers. Dirty water noted below the 2-compartment sink.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition at all time.

Routine inspection conducted today:
Handwash stations, including both public washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were noted at 4.0C or below.
All freezer units were noted at -18C or below.
Food stored protected and in the proper hierarchy.
Hot hold unit for gravy was noted at 60C.
Drain plug was available for the 2-compartment sink in the event that manual warewashing is required.
No improper dispenser was used and stored within bulk food containers - excellent.
High temperature dish machine was able to reach 76.6C at the plate level during the rinse cycle - max. min. thermometer noted available for staff to verify dish machine's internal temperature.
No signs of pest activities noted during the inspection.
Excellent improvement noted on cleanliness.
Observed staff perform proper handwashing after touching the garbage bin - excellent.
FOODSAFE level 1 for the supervisor on-site at the time of inspection still valid - expires July 25, 2026.
