Observation (CORRECTED DURING INSPECTION): Sanitizer in pail measured > 200ppm bleach at time of inspection.
**Corrected during inspection** Operator disposed of sanitizer in pail. Refilled with 100ppm bleach sanitizer from 3 compartment sink.

Review mixing procedures with staff. 1/2 tsp household unscented bleach : 1 L water.

Observation (CORRECTED DURING INSPECTION): Sole handwashing station not equipped with paper towels nor hand soap at start of inspection
**Corrected during inspection** soap dispenser refilled and towels provided for station upon request.

Handwashing station must always have liquid soap and single use method for drying hands. Also have garbage receptacle near for easy of disposal.

Observation: 1. Can opener blade observed to be rusty and have build up of food debris
2. Soiled cardboard used to line shelving under preparation tables and in walk-in cooler
3. Shelving near 3 compartment sink starting to have build up
Corrective Action(s): 1 & 3: clean identified items. Include these items as part of regular cleaning schedule.
2: replace cardboard whenever soiled. It is not recommended to use cardboard as liner as the material is not a smooth, non-absorbant material that is easily cleaned.

Observation: 1. Food items in pizza preparation table measured 6.0°C at time of inspection.
2. Chest freezer (frigidaire) measured -7.2°C at time of inspection
Corrective Action(s): 1. Food coolers must be able to maintain and hold foods at 4°C or less. Adjust unit to a lower temperature. If unit is unable to hold temperatures of foods at 4°C or less, contact refrigeration technician to have unit serviced.
In meantime, store less items in pizza preparation table. Hold extra toppings in 2 door preparation table (efi).
2. Chest freezers should hold temperatures of -18°C or less. Adjust unit to a lower setting and monitor to ensure unit can hold at temperatures of -18°C or less. If unable, contact refrigeration technician to have unit serviced.

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.

General:
No pest activity observed at time of inspection; Facility serviced by a professional pest control company on a monthly basis.
