Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer was found at 0ppm concentration during time of inspection.
Corrective Action(s): Ensure to change sanitizer on more frequent basis. New bleach solution was made by employee onsite during time of inspection. Bleach water sanitizer measured at 100ppm concentration.

Observation (CORRECTED DURING INSPECTION): Back garage/loading door was found to be opened. All back doors must be closed at all times and only opened when necessary. This will help eliminate the riskf for pest entry.
Corrective Action(s): Employee onsite closed the door so there is no gap at the bottom.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Walk in cooler requires thorough cleaning. Fans, ceiling and walls observed to be dirty.

All food equipment, food storage areas in back of kitchen require reorganizing and cleaning. All deep cleaning is needed.
Corrective Action(s): Clean and sanitize walkin cooler, hard to reach areas, reorganize all storage areas in back (ie. separate food items from non-food items/equipment), organize all catering supplies.

This needs to be completed by March 26, 2019.

Routine inspection.
Note: No menu changes or changes to the food safety plan at this time.
Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
All coolers found at 4c or below.
All freezers at -18c or below.
Note: No hot holding onsite.
Foods are located off the floor.
Dishwasher reached 72c at dish level for rinse cycle.
Employees onsite have foodsafe certification.
No pest issues noted during time of inspection.

The following requires operators attention:
1. see above noted violations
2. All paper towel dispensers need to be replaced or in working condition. Do not use paper towels rolls on the counters- paper towel dispensers need to be permanently mounted to the walls.
3. Chest Freezers require thorough deep cleaning.
4. Provide Environmental health officer with a copy of the last pest control inspection.
