Observation (CORRECTED DURING INSPECTION): Observed built-up of food debris on meat band saw. Operator informed meat bandsaw is cleaned and sanitize twice a day. Operator informed that in-use utensils are washed washed with detergent and water once a day.
Corrective Action(s): Educated operator on proper washing and sanitizing of food contact surfaces, in-use utensils, meat bandsaw, and kitchen equipment. All food contact surfaces, kitchen equipment, in-use utensils must be washed, rinse, sanitized. All in-use utensils and meat bandsaw must be washed and sanitized every 2 hours. Sanitizer chlorine must be at 100-200ppm chlorine. Educated operator on proper dilution of bleach solution (1:500).

Observation (CORRECTED DURING INSPECTION): Observed 2 buckets of sausages delivered on-site. 2 buckets of sausages observed to measure at 21.5C and 23C internal temperature. Operator informed that they pick them up at a restaurant titled Bharat Sweets & Restaurant, 15166 Fraser Hwy. No invoice is produced. Buckets of sauges not protected from contamination. Operator voluntarily discard food products.
Corrective Action(s): Discard the aformentioned products due to improper transporation of food and possible unapproved food.

Routine Inspection conducted today.
Stand-up freezer and walk-in freezer measured at -18C or lower. Walk-in cooler measured at 4C. Display coolers measured at 4C or lower.

NOTE: Ensure proper dilution of bleach sanitizer spray bottles and 3rd-compartment sink. Ensure that Combi Oven is properly cleaned and sanitize to remove all food debris by end of day.
