Observation (CORRECTED DURING INSPECTION):
- Multiple bags of raw lamb chops probed at 18.6C in room temperature. Staff stated that they were put out from the cooler to be prepared.
Corrective Action(s):
- There is no reason to warm up 'cold' food item for prep. Take the item out from cooler when they can be prepped immediately. Items discarded.

- Mechanical dishwasher interior surface observed with debris build up.
- Pizza oven roller racks & rods observed with food debris build up.
- All prep coolers observed with soiled fan covers. Food debris observed above the fan unit inside the pizza prep cooler.

- Biweekly pest control service done by professional pest control company.
- No leak observed underneath the 2 compartment sink.
