Observation: The kitchen hand sink hot water has been turned off and the handle on the hot water tap is loose and spins. A hand wash sink must always be provided with hot and cold running water.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (The mechanical dishwasher final rinse sanitizer residual measures zero ppm Cl. The sanitizer residual must measure at least 50 ppm Cl as measured by sanitizer test papers. The dishwasher does not have a 'prime' button/switch to 'pre-load' the wash and rinse cycle. Air enters the sanitizer feed line when the 'pick-up' wand is removed from the empty container and placed into the new sanitizer container. A 'prime' switch allows the operator to refill the sanitizer feed line with fresh sanitizer when the machine is put back into use.)
Comments

The dishwasher final rinse sanitizer residual measures 100 ppm Cl. The front service area display fridge product temperatures measure < 4 C.
It is strongly recommended that a sanitizer 'prime' switch/button be installed on the dishwasher so that the operator can run the sanitizer pump after changing the sanitizer reservoir and thus remove air in the sanitizer line. Air in the line prevents sanitizer from reaching the cavity and interferes with the sanitizer cycle.
