Routine
- Front and back handsinks supplied with hot+cold water, liquid soap and paper towels.
- Operator and staff observed practicing proper hand hygiene.
- 3 compartment sink set up at the time for manual warewashing. No concerns with procedure.
- 200ppm QUATS sanitizer available in warewashing sink and spray bottles.
- Canner appeared in sanitary condition.
- Cleaned and sanitized cook ware and equipment maintained in good condition.

Temperature controls:
- Walk-in cooler: 4C - good food storage and organization.
- Prep cooler (left): 3.4C
- Prep cooler (right): 4.1C
- Probed inserts: 3.7C (ground beef), 3.4C (diced onions), 4.1 (cheese)
- Sauce cooler: 4C
- Beverage cooler: 2C
- Temperature logs are maintained - taken 2 times daily.

- General sanitation satisfactory. (Be aware of some flour/corn meal that may fall onto the ground against the wall during normal operations).
- Dry goods all off the floor.
- No signs of pests at time of inspection.
- Pest control devices noted on site - services are provided by Rentokill. Reviewed last report dated June 28, 2021 (no concerns).
- FOODSAFE requirements met - operator has valid certificate.

**digital temperature readout for walk-in cooler did not match recorded temperature inside via probe thermometers, large discrepancy noted. Consider replacing or repairing the digital thermometer should large discrepancies continue. Keep using probe thermometer inside the cooler.

Signature not obtained due to COVID-19. Reviewed observations with operator and emailed report.
