Observation (CORRECTED DURING INSPECTION): Greater than 200 ppm chlorine sanitizer was set up in the spray bottles as the chlorine test strips were blanking out.
Corrective Action(s): Ensure 100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) is added into the spray bottles. The operator reviewed this procedure with staff at the time and set up 100 ppm chlorine sanitizer in the spray bottles.

Observation (CORRECTED DURING INSPECTION): At the time of inspection, a pork product was dropped to the floor and a staff member was observed using tongs to pick it up. The pork was discarded by the operator however the staff member was about to reuse the tongs to move the pork from the boiling container to another clean container.
Corrective Action(s): Ensure all food contact surfaces that contact any items on the floor are immediately washed and sanitized prior to reuse. The tongs were placed through the dishwasher upon verbal direction by the E.H.O.

Observation: Both bleach bottles were not labelled at the time of inspection.
Corrective Action(s): Label the chemical bottles as "bleach water" or "chlorine sanitizer" to identify their contents; Correct today.

Observation: A light cover is missing from the ceiling above a food prep. area.
Corrective Action(s): Ensure the missing light cover is replaced within 2 weeks time.

Observation: A thermometer is missing from a prep. cooler. Temperature records were not being maintained.
Corrective Action(s): Obtain a new thermometer and place it inside the prep. cooler. Ensure temperature records for refrigeration units are maintained at least on a daily basis.

Comments

Handsinks in the kitchen and handsinks in the washrooms were supplied with liquid soap, hot and cold running water, and paper towels.
Coolers were 4 degrees C (40 degrees F) or less.
Freezers were -18 degrees C (0 degrees F) or less.
A probe thermometer was available onsite.
Cooling temperatures of food were reviewed with the operator. Food is to be cooled from 60 degrees C to 20 degrees C in 2 hours and 20 degrees C to 4 degrees C within 4 hours (a total of 6 hours). The operator mentioned that they slice the pork pieces, portion out the food, and then place it into the freezer.
100 ppm chlorine sanitizer residual was available at the plate after the dishwasher final rinse.
