Observation: Food debris build up noted along edges of wall floor connection in various parts of premises (minor).
Floor drains in washroom and by dish sinks building up with food, grease and biomat. This will be a primary breeding environment for fruit/drain flies come breeding season.
Corrective Action(s): Implement drain maintenance plan early in spring to prevent the development of flies breeding in these primary habitats. Every second day to every day perform the following: remove grate cap and scour clean, pour very hot water down the drain, and add bleach to deter breeding. Get this in a written plan for staff to follow.

- Make sure the bottom of the pizza prep coolers get cleaned more often, maybe daily. There should be minimal build up of food debris remaining after nightly cleaning.
- temperature controls good, both cooling and freezing.

No fruit flies noted. Great! Be prepared for breeding season by limiting habitat options and sanitizing key areas as discussed.
