Observation: Upper floor storage area - trace mouse droppings in corner of meeting room and along walls of storage hallway.
Corrective Action(s): Areas described are to be thoroughly cleaned to remove debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.

Comments

Reviewed dishwashing process with manager.
- Staff wash dishware using high temp. dishwasher.
- Food inserts arranged on shelving to allow for air drying
- Dishware on drying shelving observed in sanitary condition

Beverage cooler adjusted, temp -2 C

Walk-in cooler re-organized - raw protein products grouped together on shelving away from contacting potentially ready to eat food product.

Note:
Lactantia beverages - label indicates product to be kept refrigerated at 1 - 4 C, 2 packages of product stored at room temperature. Return product to supplier unless information from processor can be provided indicating product is shelf stable.


COVID-19 Control Measures
- Seating capacity has been reduced since previous inspection to allow guests to be socially distanced
- High touch point disinfection schedule has been expanded to include back of house touch points

ACTION: Due Nov 3, 2020
- Revise / educate staff how to use Kayquat as a surface disinfectant, product requires a 10 minute contact time to disinfect surfaces. OR Select an alternative Kay brand disinfectant available and dilute bleach (1000 ppm chlorine = 20 ml bleach / 1 litre water) require only 3 minute contact time to be effective against COVID-19.
- Provide a protective barrier at point of sale station - staff and customers observed not achieving social distancing of 2 meters
