Observation: Found dirty dishes on both sides of the dishwasher.
Corrective Action(s): 1. Ensure to keep dirty dishes on the dirty side of the dishwasher.
2. Wash and sanitize clean drain board, and keep clean for air drying after being washed and sanitized in the dishwasher.

Observation: 1. Found tomato sauce left in open can in the cooler.
2. Found most food items in the cooler and dry storage to be stored with out being covered.
3. Found dry goods being stored in containers with heavy build up of food debris.
Corrective Action(s): 1. Move leftover tomato sauce to a clean reusable container after opening. Do not store leftovers in the can as the metals can leach into the sauce which is harmful if consumed.
2. Ensure all food items (rice, sauces, spices, flour, etc) are covered when not in use (i.e. stored in cooler, freezer, and dry storage).
3. Store food items only in clean reusable containers. Wash and sanitize containers when empty before refilling.
