Handsinks stocked with liquid soap, paper towels, and hot/cold running water - good
Duct tape and aluminum tape removed from various surfaces - good
Splatter and food debris at the chest freezer area has been cleaned - good

Fresh mayo stored in undercounter cooler at 2 degrees C, however, sushi bar cooler is turned off at the end of the night and contents in sushi bar cooler measured between 4 and 8 degrees C. If the sushi bar cooler is turned off in the evening, do not use the cooler unit until it has had time to cool down again in when turned on in the morning (approx 1 hour). Otherwise, do not turn off the cooler unit.
Sanitizer spray in the back of house filled with 100 ppm chlorine bleach, however, bottle was breaking. replace spray bottle
