- Turn the ice machine off, empty all ice out, clean & sanitize. Ensure this gets done regularly to prevent mould forming on the surface.

Observation (CORRECTED DURING INSPECTION):
- REPEAT VIOLATION: No paper towel observed at 2 handsinks (one by the prep area, one by the dishwasher)
Corrective Action(s):
- They were replenished at the time of inspection. Ensure staff washes hand frequently and to replenish the dispenser when they use up the paper towel.

- All coolers at 4C or below.
- Freezer at -9C.
- Hot held food items at 60C or above.
- Low temperature dishwasher reached 46C during the final rinse and the rinse water measured 100ppm chlorine.
- Sanitizer available in spray bottles - measured at 200ppm.
