Routine inspection of the freeze dry facility and detailed discussion and review of the SSOPs for equipment and surfaces to be used for
freeze drying of Trypsin products.
The facility is planning on freeze drying various types of Trypsin enzyme formuations obtained from Neova Biotech, Abbotsford.

Ensure to develop the following separate SSOPs to prevent cross contamination of freeze dried fruits from Trypsin residue.

1. SSOP for Freeze Dry chamber outlining detailed step by step procedures for every internal and external component and all surfaces
2. SSOP for Blast freezer outlining detailed step by step procedures for all surfaces.
3. Cleaning procedures for the packaging area floor and tables used for packaging Trypsin.
4. Submit a detailed sampling procedures for Allersnap swab testing and sampling schedule for various surfaces as discussed.

Blast freezers registered < -40 C.
Walk-in freezer < -25 C.
Quats sanitizer in the foot wash tray> 400 ppm
All staff must wear clean aprons, hair nets and gloves while handling foods.
Hand wash stations supplied with liquid soap and paper towels.
Sturfaces and are tested for ATP activity, Listeria, E.coli, Coliforms and Enterobacteria.

* Ensure that hand wash sink in the fruit cutting area is in good working order ( Immediately).
General sanitation is satisfactory.

Please submit the above procedures at the earliest prior to starting any freeze drying of trypsin.
