Observation: Area originally designated as a "deli storage" room now being used to package ready to eat foods but no hand wash station is located in this room.

Observation: 1) Observed two racks of raw meats stored on either side of a rack of cooked sausage
2) Observed a fly strip hanging from the ceiling in the room with the smokers in a location where dead flies could drop off onto open food.
Corrective Action(s): 1) Separate raw and ready to eat racks in this room. Dedicate and clearly label areas in this cooler for raw and ready to eat racks of food so there is no confusion as to the state of the food and reduce the chances of cross contamination. Due: Today
2) Move any fly strips to a location where there is minimal to no chance of food or food contact surfaces being stored or moved under these strips. Due: Today

Observation: Fermented sausage is now being produced on site. No food safety plan or approval for this type of high risk product was submitted or given.
Corrective Action(s): 1) Cease and desist selling any fermented product until a food safety plan is submitted and subsequently approved by an EHO. Correction order issued.
2) Submit a food safety plan to the under signed EHO for review. Templates provided.

Observation: Brines in meat processing room are being stored in garbage cans. While these appeared to be new and in good condition, they are not intended for contact with food as the plastic material can contain non-food grade chemicals.
