On Follow-Up:

-200ppm bleach (1 oz per gallon water) is available in a spray bottle on-site.
-A probe thermometer is available.
-Hot dogs are being hotheld at 70 degC.
-Tongs are stored in a clean, empty container.
-Instructions for cooking and checking hot dogs and dishwashing procedures are posted. One change that is required is to NOT rinse after soaking the clean dishes in the bleach solution. You need to air dry them only. So: Wash with soap, rinse with clean water, soak in 1 oz bleach per ga water solution for 2 minutes and then Air-Dry right away (no rinsing in between). Change made to the sign on-site.

CORRECTION ORDER RESCINDED. Ensure staff is trained and follow these procedures.
