Observation: A sneeze-guard is required at the counter near the hot-holding unit to protect the cooked chicken legs during the packaging process into the single-use take out containers.
Corrective Action(s): Install a sneeze-gaurd (washable barrier) at the aforementioned counter to protect food from contamination (e.g. sneezing or coughing by customers); Correct by January 31, 2020. In the meanwhile, use the counter-space behind the hot-holding unit to package the cooked meat as it will provide a barrier from the public. Contact the district E.H.O. for a follow up inspection.

Comments

Inspection was conducted in response to a services change from a food store to food service establishment (for cooked chicken leg pieces only).
-Operator has installed a Hobart rotisserie oven (NSF/ANSI 4 certified) and hot-holding unit. Both units have built in thermometers.
-Hot-holding unit was preheated to at or above 60 degrees C and was empty of food.
-Ventilation hood was present above the rotisserie oven. Operator has stated that they have had it inspected by the City of Surrey.
-Handsink near the rotisserie oven was supplied with liquid soap, hot and cold running water, and paper towels.
-Single-use gloves were available.
-Probe thermometer was available.
-100 ppm chlorine sanitizer was available in a labelled spray bottle.
-Ecolab specialty cleaner was available for the oven. Rotesserie oven has a self-clean cycle and had a hose attached connecting to the cleaner. Operator stated that both Hobart and Ecolab were involved in setting up the hose connection. Oven was connected to a water supply line as a potable water rinse is required after the oven has been cleaned using the detergent during the self-clean cycle.
-Enclosed desiganted cabinet space was available for the single-use take-out containers. Note: Do not use the cabinet (with hose line) immediately below the rotesserie oven for storage of take-out containers or dry goods. Use the other cabinet and storage drawers next to it.
-Operator has a new pair of tongs for the oven. Please obtain extra tongs that they may be rotated and cleaned and sanitized every 4 hours between use and to separate the tongs for cooked meat vs raw meat based on a colour-coding system.
-3-compartment sink was supplied with hot and cold running water.
-Walk-in-cooler was at or below 4 degrees C.
-Operator made final revisions to the food safety and sanitation plan for the cooked menu items and addition of new equipment on-site during the inspection.
-Updated floor plan and application for health approval form has been submitted regarding the services change.
-Operator has a valid FOODSAFE Level 1 certificate valid until April 7, 2024.
-Permit fee cheque of $37.50 made to Fraser Health was provided to the district E.H.O. of Fraser Health at the time of inspection from the effective date today to March 31, 2020.

Health approval from Fraser Health to sell cooked chicken leg pieces in take-out containers was provided at the time of inspection; this approval does not exempt you from obtaining approval from any other agency.
