Observation (CORRECTED DURING INSPECTION): Refer to Code #308; prep cooler by the cooking equipment was not working properly. Probe thermometer indicated the temperature to be at 14-15 C. All cold potentially hazardous foods must be stored at 4 C or lower.
Corrective Action(s): Required operator to transfer all foods to the walk-in cooler as it is able to hold all foods at 4 C or lower. Operator transferred all foods at the time of inspection

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Observed the following items with dried food debris and grease:
-knives, magnet knife holder, cutting boards, food grating board
Prep. cooler by the next to the cooking equipment shelving was greasy.
Corrective Action(s): Required operator to clean and sanitize all tools noted above. Items must go through the high temperature dishwasher. Prep cooler shelves must be cleaned and sanitize.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Staff in the kitchen was not observed to wash his hands during the entire inspection. He had changed tasks during the inspection. Apron was being used to wipe his hands without proper hand washing.
Corrective Action(s): Required operator to wash hands with warm water and liquid soap. Apron should not be used to dry or wipe hands after different tasks. Proper hand washing must be taken. Staff washed his hands at the time of inspection

Observation (CORRECTED DURING INSPECTION): Observed several items thawing at room temperature: A container of frozen fish and pre-cooked frozen foods.
Corrective Action(s): Required operator to transfer all foods to the walk-in cooler. Education provided that thawing must be done at 4 C or lower

304 - Premises not free of pests [s. 26(a)]
Observation: Observed rodent droppings in the back storage area, near the dough mixer. Back area is cluttered and is hard to clean. Pest activity was noted during the last inspection and was cleaned up. Presence of droppings indicate active infestation.
Corrective Action(s): Required operator to clean the droppings, ensure to wet them with bleach water before sweeping them to prevent aerosolization. Upon next routine inspection, if the problem continues, pest management contract may be enforced.

Observation: Observed a few openings at the bottom of the back door. Wooden door stopper was damaged and had crevices large enough to allow pests to enter the premises.
Corrective Action(s): Required operator to either replace the wooden stopper or to fill the crevices in to prevent pests entering the premises.

Observation: Prep. cooler by the cooking line not able hold temperature at 4 C or lower. When measured with thermometer, it was at 14-15 C. Thermometer was in the cooler for more than 30 minutes.
Corrective Action(s): Required operator to call technician and have it repaired. Until then, prep cooler is not be used to store cold potentially hazardous foods.
