Observation (CORRECTED DURING INSPECTION): Staff state cooks generally wipe tongs (stored in sanitizer) on reusable cloth towels to remove sanitizer, prior to use on the cook line.
Corrective Action(s): Discussed practice during inspection. Either store tongs and utensils in hot water at 60 C or higher, in cold ice water at 4 C or colder, or rinse them under potable water after removal from sanitizer buckets. Do not wipe tongs on cloth towels to remove sanitizer.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Bar hand sink nearest glass washers was not supplied with paper towels. Bar hand sink nearest oyster bar was not supplied with hand soap. This has been observed at past inspections.
Corrective Action(s): Replaced during inspection. Ensure all hand sinks are supplied with warm water, liquid soap and paper towels at all times the restaurant is operational.

Observation (CORRECTED DURING INSPECTION): Cider cans, as well as a squeeze bottle, were stored directly in contact with ice in the ice well at the bar.
Corrective Action(s): Corrected during inspection. Ensure ice for use in drinks is not subjected to potential contamination from product containers or other foreign items.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Several plastic takeout containers used as scoops were observed inside bulk bins. One container in the fry freezer had cracked and was in poor condition.
Corrective Action(s): Freezer container discarded. Ensure remainder of containers are replaced with food scoops with handles by tomorrow (3rd March 2018). Do not leave takeout containers inside bulk bins, as these could disintegrate and contaminate the food products.

Observation: App line cooler is not in working condition. All food was removed from unit prior to inspection.
Corrective Action(s): Have cooler in working condition at 4 C or colder by next week (9th March 2018). Call area inspector for reinspection once serviced.

*General sanitation satisfactory throughout premises.
*Tools and utensils generally stored in clean condition.
*Organization of raw and ready-to-eat foods satisfactory.
*Low-temperature dishwasher provided 50ppm chlorine sanitizer in final rinse.
*Bar glass washers: 25ppm iodine/50ppm chlorine provided in two separate washers on site. Ensure iodine dosage does not increase, as this appears to be at the upper recommended limit.
*Cooler and freezer temperatures satisfactory (recent heavy usage noted for line coolers).
*Note: temperature logs were not available for past week. Ensure these are restarted immediately.
*Ice machine in oyster bar area maintained in satisfactory sanitary condition.
*Hand sinks generally supplied with warm water, liquid soap and paper towels.
*Clean-in-place equipment maintained in sanitary condition (several items recently used during inspection).
*Hot holding units operating at or above 60 C.
*Note: slight mildew accumulation observed on non-ice contact surfaces in main ice machine upstairs. Ensure this is cleaned and sanitized by tomorrow (3rd March 2018).
*Note: ensure perishable items are stored within the food section of the walk-in cooler, rather than the alcohol section. Alcohol section is approximately 1-2 C warmer than food section, and does not comply with regulations regarding food storage temperature.
*Note: small number of fruit flies observed in bar area. Ensure professional pest control is contacted if issue worsens or does not abate by next week (9th March 2018). Install fruit fly traps by tomorrow (3rd March 2018).
