Observation (CORRECTED DURING INSPECTION): hot holding cabinet in the front of house was set at 130F and holding contents at approximately 50C
Corrective Action(s): discarded all items. ensure that all hot potentially hazardous foods are kept >60C (140F) at all times.

=Kitchen and front area handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (7C) and all other coolers measured < 4 degrees C
=Walk-in freezer measured -10C and grab-and-go freezer -18C
=Burek pies and pitas hot held <60C, refer to violation above
=2 compartment sink for warewashing available with sink plugs, staff are able to demonstrate proper manual warewashing procedures
=Wiping cloths stored in sanitizer solution at 100 ppm chlorine and available in spray bottles
=Dedicated prep sink available for food preparation
=General sanitation was satisfactory at the time of inspection
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
=Band saw and deli slicer were maintained in a sanitary manner, sanitized every 2 hours
=Staff hygiene satisfactory at the time of inspection; Staff FOODSAFE level 1 certification could not be verified at the time of inspection. Have certification available during inspections
