Observation (CORRECTED DURING INSPECTION): Cooked chicken curry being cooled in two large plastic bins. Internal temperature of curry measured at 60C. The bins are too large to adequately cool the curry within 4hrs.
Corrective Action(s): Transport the curry in shallow bins to facilitate in rapid cooling. Ice wand can also be used.

Observation: 1.) Multiple food items stored uncovered inside the prep coolers and walk in cooler (ie chopped vegetables, sauces, meats).
2.) Multiple dry foods being stored uncovered inside the dry storage room.
Corrective Action(s): Cover all food items with proper tight fitting lids or plastic wraps.

Observation: Build up of food debris in the following areas:
- underneath the sinks
- around the main food prep cooler
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule.

Observation: Broken ice machine.
Corrective Action(s): Fix or replace the improperly working ice machine.

Comments

- General sanitation needs improvement. See violation section above.
- Main handwashing station supplied with hot/cold running water, soap, paper towels.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Surface sanitizer available in white buckets at >100ppm chlorine bleach concentration. Ensure to change out the sanitizer frequently.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection report. Pest control reports available for review.
- FOODSAFE trained staff on duty. Verified at the time of the inspection. Keep copies of all FOODSAFE certificates on site for review by the health inspector.

Temperature control:
- All coolers at < or = 4C
- All freezers < or = -18C
- Rice warmer = 60C
- Working thermometers inside all other refrigeration units.
- Immediately begin daily temperature log for all coolers/freezers.
