Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Sanitizer was not made at the time of inspection. Manager was not on site and staff present were not aware of how to make sanitizer solution. Sanitizer solution (1L water with 1 tsp bleach) was made during inspection.
Correction: Ensure to make sanitizer solution at the beginning of the day to sanitize all food contact surfaces before handling foods. The solution shall be changed at least every 4 hours. Store cloths in a bucket with sanitizer solution. Sanitizer may also be stored in spray bottles for easy application. Label all sanitizer bottles & buckets. DATE TO BE CORRECTED: IMMEDIATELY
Comments

- General cleanliness and organization has improved.
- Labelled sanitizer bucket with 100ppm chorine residual is in place.
- Re-caulking at the 1 compartment sink has been completed; however still shows blackened caulking along the wall. This needs to be fixed by next routine inspection.
- Ensure to obtain pest-proof containers with tight-fitting lids for dry ingredients. Currently, the operator has tied the top of bags but this can only serve as temporary means.
- The wall by the dishwasher that is chipping off is covered with sran wrap. This is not an approved material for surfaces used in kitchen. Remove the wrap and ensure to re-paint the wall with water-proof paint by the next routine inspection.
- Post health permit in a conspicuous location.
