Met with Chef and discussed the following:
- grease trap is cleaned every 6 months/ and it is done by UFV maintenance/ next cleaning is scheduled in 3 weeks
- FS lev 1 trained staff present at the time of inspection
- daily temp logs ( up to date since they were open in September )
- Any maintenance is done by " work order" to the UFV maintenance team
- all food protected during storage
High temp dishwasher reached 180F at the final rinse
Quat measured at 200ppm
NOTE: the facility is closed during summer from mid June, reopening in September and winter/ Christmas break, reopening in January
