Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer in one of the serveries (Pearl Garnet) was measured at 0ppm quats residual in the sanitizer bucket.
Corrective Action(s): Sanitizer solution from dispenser was measured at 200ppm quats. Ensure that the staff empty out the bucket at the end of service and fill fresh bucket before the start of next meal service. Sanitizer buckets (red) must be used for sanitizer solution only and should not be used for soap solution

Observation: Few rodent droppings were observed in one corner in dry storage room.
Corrective Action(s): Remove the droppings, clean and sanitize the area. Monitor the area for any new activity.

Routine inspection conducted:
Main Kitchen:
- All handwashing stations are supplied with hot and cold running water, liquid soap and paper towel
- All coolers - two upright storage coolers and walk-in cooler were measured at less than 4C
- Walk-in freezer and upright freezer are measured at less than -18C
- Hot holding units were not in use at the time of inspection.
- Food contact surface sanitizer from dispenser and in the buckets was measured at atleast 200ppm quats solution
- High temperature dishwasher was measured at 72C during final rinse cycle at the dish surface
- Food storage practices are satisfactory
- FoodSafe level 1 certified staff is present
- General sanitation is satisfactory

Serveries (Opal, Diamond, Sapphire, ABI, Ruby Emerald and Pearl Garnet)
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Stand-up & under the counter coolers maintained at 4C or less.
- High temperature dishwasher registered 71 or higher at the plate level during the final rinse cycle for all serveries.
- 200 ppm quaternary ammonium available from all the dispensers.
- General sanitation satisfactory.
- No pest activities observed in the serveries at the time of inspection.
- Temperature and sanitizer logs maintained and available for review.
