302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1- Adequate food contact surface sanitizer not available in the kitchen, cook line and bar area. It was observed that the QUAT sanitizer dispenser not working properly. Operator refilled the sanitizer bottles at the time of inspection. Spray bottles were labeled and provided in the kitchen, cook line and at the bar. QUAT 200 ppm has been detected in the solution.
Reminder: Ensure to obtain test papers to test the sanitizer concentration. QUAT concentration of 200-400 ppm is required to be present in the solution.

2- Glass washer lacked sanitizer concentration at the final rinse. Operator provided chlorine sanitizer at the time of inspection. Chlorine 50 ppm has been detected at the final rinse.
Obtaine chlorine test papers as discussed. Test final rinse sanitzer at least daily to ensure sanitizer solution has the right concentration.

Observation (CORRECTED DURING INSPECTION): All hand washing stations observed without paper towels. Operator provided paper towels at the time of inspection.
Hand washing sink in bar area lacked liquid soap. Operator provided liquid soap in dispenser at the time of inspection.
Corrective Action(s): Reminder: Frequent hand washing is to be done between tasks, after using washrooms or handling any raw food.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1- Ceiling tiles observed to be missing from their placement above the food prep area.
2- Ice scoop stored in the ice bin inside the ice machine.
Corrective Action(s): 1- Ensure to place ceiling tiles and ventilation screens back in their placement in order to protect dust and debris falling into food.
2- Store ice scoop in a sanitary container outside of the ice bin. Do not store ice scoop directly on ice.

Observation: Food debris and grease build-ups observed underneath equipment and thoroughout the kitchen.
Corrective Action(s): Deeply Clean and remove build-ups from under the equipment, shelving in the kitchen and cooking line. Organize shelves so that cleaning and sanitizing is possible.
Degrease the kitchen floor and Ensure food debris are cleaned daily.

Routine inspection

A follow-up inspection is to be conducted on July 29th, 2022.

General Comments:

- Food in Walk-in Cooler measured at or below 4°C. Freezers are at or below -18°C. Temperature monitoring log is to be obtained and the log is to be kept updated
- Food in walk-in cooler is organized and raw-cooked separation maintained. Good Work!
- Dry storage shelving wires are clean. Ensure to clean the floor underneath shelves.
- QUAT 200 ppm measured in the final rinse of mechanical Low-Temp dishwasher.All cleaned implements are to be kept stored in a sanitary manner.
- All debris is to be cleaned up in the storage area regularly.
- Food Safe trained staff on site at all times.
- No obvious sign of pest activity at this date.

Bar Area: Ice well cleaning and sanitation were discussed.
- Staff hand washing were discussed.
