Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available on site at the time of inspection. Staff prepared the bleach solution at the time of inspection. The concentration of bleach noted at 200ppm.
Corrective Action(s): Ensure that all food contact surfaces are properly cleaned and sanitized with food grade sanitizer to prevent the growth of disease causing bacteria on food contact surface and reduce the risk of food contamination.

Comments

Follow-up inspection conducted to routine inspection (report #TGIL-C9VT9S) as the meat department has re-opened. The following observations were made:

Meat Department:
- The meat department is fully operational.
- Temperature of display coolers at 4C or less.
- Walk-in cooler at 3C.
- Walk-in freezer at -10C.
- All meat products were properly covered inside coolers/freezer.
- Staff was in process of cleaning band saw & meat grinder. See violation above.
- Handwash station available and had adequate supply of hot & cold running water, liquid soap & single use paper towels.
- 2 compartment prep sink available.
- 2 compartment dishwashing sink available for manual dishwashing.
