302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishwasher is not reaching sufficient rinse temperature for sanitizing dishware. Maximum temperature recorded after numerous cycles was 69.9 degrees Celsius, however, most cycles reached between 60 and 65 degrees Celsius. Incoming water temperature (max. temp was 45 degrees Celsius from the faucet) may not be sufficient in temperature to be boosted above 71 degrees Celsius by the booster heater.
Corrective Action(s): *Dishwasher repair technician was called to assess and repair (as required) the dishwashing machine by the manager.
*As a temporary measure, all dishware must be manually-sanitized using a sanitizer solution (eg. 100ppm chlorine bleach and water) until dishwasher adjustments/repairs have been completed.
*Demonstrated correct mixture ratio of chlorine bleach and water to the manager at time of inspection. Use 5 capfuls of LT Sanitizer product in the sink basin (filled to the drain plug overflow level) to achieve 100ppm concentration solution (minimum concentration required for manual sanitizing).

Observation: ouse droppings observed on metal wire food storage shelves near the walk-in cooler.
Mouse droppings observed on metal trolley shelf and on the floor underneath the trolley near the walk-in cooler. Orkin pest control report dated yesterday confirms mouse activity inside the storage room and around building exterior.
Corrective Action(s): *Thoroughly clean and disinfect surfaces/areas where mouse droppings are found. Cleaning staff should wear disposable gloves and masks when removing droppings for personal protection.
*Actively monitor all the food storage areas for new evidence of mouse activity (eg. droppings).
*Ensure to follow any/all recommendations from the pest control technician to mitigate/eliminate pest activity in the premises.

Observation: Final rinse temperature gauge on the dishwashing machine is not accurately displaying the actual temperatures inside the machine. Kitchen staff are relying on the temperature gauge to confirm that the dishwasher is reaching sufficient temperature for sanitizing dishware (ie. 180 degrees F).
Corrective Action(s): Re-calibrate or replace the final rinse temperature gauge to accurately display the temperatures reached inside the machine.

*Note: the quaternary ammonium sanitizer in the spray bottle is not designed to be used as a food-grade no-rinse sanitizer. Any food-contact surfaces sanitized with this chemical should be rinsed with potable water afterwards.
