- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Multi-Quat sanitizer available at 200 ppm in sanitizer pails and from dispensing unit
- Low-temperature chemical dishwasher was installed sometime last year. 100 ppm chlorine residual detected at the dish surface after final rinse cycle - good.
- Three-compartment sink available for manual warewashing for larger equipment that cannot be washed in the dishwasher
- Walk-in cooler, drawer coolers, undercounter and prep coolers were all maintaining temperatures at 4C or colder.
- Freezer temperatures satisfactory
- Hot-held food items were measured at 60C or hotter.
- Toppings held in refrigerated inserts are time-tracked and used up or discarded every 2 hours.
- Dipper well for ice cream scoops was in use - good.
- Food storage practices satisfactory. All food stored off the floor and properly covered in dated containers. Good separation of raw and ready-to-eat food items.
- Equipment maintained in sanitary conditions.
- General sanitation is satisfactory. Dry storage area also satisfactory.
- Accurate thermometers available. Temperature records well maintained and up to date.
- FoodSafe certified staff onsite. Valid certificates stored in binder.
- No signs of pest activity noted.
