Observation: The folloowing requires operator's attention:

- All foods in walkin and freezer should be located off the floor. Reorganize walkins so that any food itmes are atleast 6" off the floor.

Note: All food items should be stored in food grade containers with lids.

Comments

- Handwashing station in kitchen /prep area equipped w/ hot & cold running water, liquid soap & paper towels.
NOTE: **Ensure to keep used paper towels in bin, close to handsink.

- Dishwasher reached 50 ppm concentration at dish level for sanitizing / rinse cycle.

- Bleach water sanitizer @ 100ppm concentration in bucket w/ rag.

- Walkin cooler @ 3C and equipped w/thermometer. Insert cooler @ 4C. Front area under counter cooler @ 4C.
- Hot food items (soup) @ 66C.
- Freezer (walkin) at -18C.

- Premises observed to have pest issues. No food being stored in garage area.
- Foods are in closed containers w/ lids.
- Overall sanitation is good throughout facility.
