Observation (CORRECTED DURING INSPECTION): 1. Food debris observed on the meat deli slicer (under the blade).
2. Food debris observed on the can opener.
Corrective action: Disassemble to clean and sanitize above equipment.
Rationale: Unclean equipment can support the growth of pathogens (eg. bacteria) and production of toxins, which can contaminate food and lead to foodborne illness.

Observation (CORRECTED DURING INSPECTION): Ice scoop and container observed to be stored at the corner of the handsink.
Corrective action: Ensure that no equipment are stored in or on the handsink.
Rationale: Handsinks need to be accessible and free from equipment storage in order for staff to practice frequent and proper handwashing, which can limit the spread of pathogens (eg. bacteria) and reduce foodborne illness.

Observation (CORRECTED DURING INSPECTION): Uncovered container of diced chicken observed to be stored on the floor in the walk-in freezer.
Corrective action: Ensure that food is stored a minimum of 6 inches above the floor and covered.
Rationale: Food needs to be covered and stored off the floor to be protected from contaminants and spills. Contaminated food can lead to foodborne illness.

Observation: Dripping water observed above the 2-compartment prep sink.
Corrective action: contact a technician to fix the leak.
Rationale: Dripping water can contaminate food in the prep sink which can lead to foodborne illness. Dripping water can also attract pests, which can contaminate food and food contact surface.

General observations:
1. Temperature:
-All coolers (walk-in (in kitchen and downstairs) coolers, prep cooler, under the grill cooler, dairy cooler, upright beverage cooler) maintained a satisfactory temperature.
-Freezers (upright freezer and walk-in freezer) maintained at a satisfactory temperature.
-Cold potentially hazardous foods stored on ice.
-Sushi rice for poke bowl measured with pH 4.0

2. Sanitation
-High temperature dishwasher measured at 75C at utensil surface.
-All handsinks equipped with liquid soap, paper towel and hot/cold running water.
-Lactic acid sanitizer measured to be within the adequate concentration.
-Ice machine in sanitary condition with ice scoop stored in sanitary condition (ie. in designated food grade container)
-Tongs cleaned and sanitized after every 2 hours.

3. Food storage
-No expired food observed

4. Pest control
-No pest activity detected. Premises serviced by professional pest control company.

5. Administrative
-One staff on-site has valid and current FOODSAFE (expires in May 14, 2022)
