Observation (CORRECTED DURING INSPECTION): 1) Staff reviewed manual warewashing procedure: wash in one sink, rinse in second sink then air dry. She referred to the sign posted on the wall. 2) Sanitizer bucket in kitchen measured 0ppm bleach. New solution is made in evening.
Corrective Action(s): 1) Staffs must read the sign carefully. Wash and rinse is in the same sink, then sanitize with 100ppm bleach in second sink for 2 minutes before air dry. 2) You must use 100ppm bleach sanitizer throughout the day so this must be mixed daily first thing in the morning.

Observation: No paper towel in the handsink at the front by tea dispenser. Repeat.
Corrective Action(s): Please ensure all handwash stations are equipped with soap, paper towel, hot & cold running water at all times. Further repeat of this infraction may result in enforcement actions.

Observation: Fruit flies noted throughout kitchen.
Corrective Action(s): Please increase floor cleaning to the wall as per comments on Orkin service reports. Monthly reports were reviewed onsite. Keep compost bin closed when not in use and empty recyling bag of water bottles more frequently. Remove cardboard on grease trap and clean this area thoroughly.

Observation (CORRECTED DURING INSPECTION): A container of wooden skewers are being reused to make ebi shrimps. Staff informs that she cleans the skewers, then microwaves it to sanitize the skewers.
Corrective Action(s): Wooden skewers discarded. You can buy more wooden skewers and discard after use OR buy reusable skewers and properly wash and sanitize the skewers.
